Updgrade to a version other than the latest with finder on the mac

Lately i’ve been updating my iPhone with finder on my MacBook because i’ve seen some people say it’s actually better than OTA updates. Right now, i have an iPhone 13 Pro Max, that can be updated to the latest iOS 26 version, but i want to stay on 18. I’’m on 18.6.2, and i’ve been notified that 18.7.1 is available and i want to update, but on the Mac apparently I can only install iOS 26. Is there a way to get the latest iOS 18 with finder?

If it is no longer signed on a Mac, which wouldn't be unusual (Apple doesn't sign lower versions like 18.7.1 for very long), then you can't get it on your Mac. If it is still an option on your iPhone OTA, that would be the path to follow. I personally use OTA all the time and never have any issues. After I update, I ALWAYS Force Restart my iPhone immediately after the update --> Force restart iPhone - Apple Support

At some point, you're going to HAVE to move on up to iOS 26. Personally, I really like iOS 26. But at some point in the near future, if you want the latest security patches and bug fixes, you'll have to upgrade to iOS 26.
