iPad Notes handwriting to text missing menu

I have been using my iPad to take notes on the Apple Notes app, at work, for 1 week. I handwrite them and it converts to text. It works pretty well.

I would like to know how to write on a new line without having to hit return on the popup keyboard. I do not need or want the keyboard to ever pop up.

I feel like I'm going crazy, but 4 times this week there suddenly was a small menu in the right hand corner that had about 2-3 functions on it, and one was an arrow that was a 'enter' key. But I don't know why that menu had popped up and don't know how to get it to come back. I've searched all over the internet but can't find simple information like this for writing in Notes.

In case this has anything to do with it, I am using a ESR brand pencil.

If anyone has any ideas, I'd really appreciate the help.
