How to connect Apple Watch Series 3 to iPhone17 with iOS 26? Connection fails after some minutes just saying something like „Failed. Please try again“

Why won't my Apple Watch Series 9 connect to my iPhone? My series 9 Apple Watch will not let me connect to my iPhone 15+ because it says my phone is not running iOS 18.0 or later when my phone is updated at 18.3.2 (according to my settings). [Re-Titled by Moderator]

Hello. I struggled for a long time to connect a 3 series watch with 8.1.1. I connected it to another iPhone with iOS 18, checked the updates, completely erased it, and unpaired it. After that, it connected to an iPhone 16 with iOS 26.1
