Ok, that is not to sign into the Mail app using your Apple Account, that is to add a mail account.

Please post a screenshot of what you are seeing and make sure it does not include any personal information such as email addresses.
Then you will need to choose Google on that screen and enter your Google Password for that account. Google may require you to authenticate your account using Safari. You will then see your Google email account added to the Mail app.

Are you entering your Google Account Password. It is not your Apple Account password that it is asking for.
