Remove Stop Sharing Location from a contact
How can I remove this Stop Sharing Location from this contact?

By stopping sharing your location. The button appears because you are sharing your location - if you stop sharing your location, the button should not appear. If you HAVE stopped sharing your location, try restarting your iPhone, going back and seeing if the button is still visible.
You can see who you share your location with in the Find My app, under People. There you can also delete the people you share your location with. You just swipe on the contact, select and tap the trash can.
