How to select a specific IMEI for eSIM setup

I’m not aware of a direct means to select the IMEI.

You can label the lines, and select a default: Using Dual SIM with an eSIM - Apple Support

To do what you want, you could load a place-holding temporary eSIM, then load the eSIM you want as IMEI2, then delete the first eSIM. That’ll probably leave the selected eSIM on IMEI2.
