where is the music that apple iTunes downloaded off of my computer many years ago?

Your original music should still be on your computer unless you opted to remove the download.
The matching process does not automatically change the location of the original music. Your music would have been matched with the version on Apple’s server, non matched would be uploaded. At this stage you would have had the option to remove the original and then download the matched version.
Did you make a backup of your library before subscribing to iTunes Match. If you still have iTunes Match, you should have the option to re-download the music if necessary.
