How to sync new iPad after

Used quick start to set up my new ipad but still used old one (lost new one for a while) and now new one not up to date with emails, games etc. What can I do to synch them please?

Having used Quick Start to setup your new iPad, presumably both are signed-in to iCloud with the same Apple account. As such, insofar as is possible, synchronisation of the two devices are achieved using iCloud services.

On both devices:

Settings > [Your Name / Apple Account] > iCloud > [Saved to iCloud] See All - enable Apps and services that you wish to synchronise between devices

Thanks. My games and emails are not synched or my homescreen app icons etc. Basically I’ve got a four months out of date version of my old iPad on my new iPad. I tried backing up the new one but I think it just backed up its contents to the cloud rather than updating from the cloud. If I wipe the new ipad will it give me a quick start option again?

Mail isn't synchronised via iCloud. Instead, mail messages are independently downloaded by each of your devices from your Mail Provider's Mail Server.

Effectively, each device downloads a copy of your mail messages; in general, unless you are using a POP3 mailbox with a mail-client configured to download and delete, mail messages are only deleted from the server when expressly deleted by one or other of your devices.

Game progress is something else entirely. Synchronisation, if available, is handled either via the Game Developer's own servers - or using Apple's Game Centre functionality.
