Use Quick Start for Transferring Data:

To transfer data from the old iPhone to the new iPhone, Quick Start is the best route to take: Use Quick Start to Transfer Data to a New iPhone or iPad - Apple Support. If you did not perform this, then reset your new iPhone to Factory Settings, and then perform this transfer, once more, this time, however, using Quick Start.

You can be connected to Wifi without any cellular connection and still use Messages to communicate with other Apple devices, since that service works over wifi and uses your Apple Account. The same is true for FaceTime audio and video calls.

...also on the new phone, Settings, Apps, Phone, Allow calls on other devices, the old phone is probably listed.

Sign out of your Apple ID in the old phone if you want it to stop, or turn off iMessage and Facetime in Settings.

Using iMessage and FaceTime for communicating with other Apple devices, you do not need cellular service, it uses your Apple account. FaceTime can be used for both Audio and Video calls.
