Disabling the Stand Reminder in the settings for Activity in the Watch App during your Sleep Schedule is the only way to do that.
You can tell Apple Techs directly about this missing option in the settings for the Sleep Focus by using the feedback.
Sorry for being unclear, have a look at where to find these settings:
Open Watch App on your iPhone, tap on "My Watch" in the bottom menu, then choose "Activity" and disable "Stand Reminders"
And, after your watch finished the Sleep Mode, enable the reminder again, if needed.
I have disabled the reminder permanently, and check the stand count on my watch or Fitness app, if necessary.
To keep the watch face from lighting up when you roll over, stop alerts for messages when you expect to be asleep, and keep the stand alerts away, the suggested method is to enable a Sleep Focus for the time you typically expect to be asleep, or a little wider.
¿Do you have a sleep focus enabled?
The problem is, that you can only exclude the Fitness or the Health app, from sending you notifications during Sleep Focus-> Apps-> Silence Notifications From -> add app.
"Activity" is not listed, the Fitness app only reflects your Stand result, and you might have to disable all notifications from the Health app completely during sleep, just to stop the Stand Reminder.
