Re: Why do my videos make a clicking noise after they are done recording?
Hard to say, without knowing much about the actual recordings, the external environmental conditions while recording, your iPad's settings, resolution set, iPadOS version installed, and so many more possible influences.
Eg: You may be using an external professional microphone for high-quaility audio,
or
you may be relying on the iPad's built-in microphone.
Eg: Could there have been an un-noticed sound while playing football, (eg: continual passing traffic in the background, cicadas etc., or other actvity (sportsman practising something) on the field, that resulted in the unwanted "clicking noise.".
Is there a case on the iPad that may influence audio input, or partly cover the microphone's opening.

Wondering if Apple support's online articles (links below) may be helpful:
eg: in checking what settings you have in place for the quality of the recording on iPad:
Record a video with your iPad camera - Apple Support
Eg: says:
"Depending on your iPad model, you can record video in high-quality formats, like HD, 4K, HD (PAL), and 4K (PAL).
Note: Faster frame rates and higher resolutions result in larger video files.
- Go to Settings
> Camera > Record Video. - Select from the list of video formats and frame rates that your iPad supports.
Note: PAL is a television video format used in many countries and regions in Europe, Africa, Asia, and South America."

Wondering if you have "Spatial Audio" turned on or off:
Trim video length, adjust speed, and edit audio on iPad - Apple Support
Eg: says:
"If you record video with Spatial Audio turned on, you can later edit the video sound on your iPad—for example, reduce background noise to focus on the person speaking.
- Go to the Photos app
on your iPad.
Open a video, then tap
.
Tap Audio Mix, then choose one of the following:
- Standard: Play the original audio you recorded.
- In-Frame: Reduce sounds and voices from sources not visible in the video frame.
- Studio: Reduce background sounds and reverb, to make it sound more like you’re recording in a professional studio.
- Cinematic: Put all the voices onto a front-facing track and leave environmental noises in surround, like the audio in movies.
Drag the slider next to the mix options to increase or decrease the effect and background noise levels.
- Tap Done."
