Just so everyone knows: Quickltime freezing when Pages is in use, turns out to be an issue with corespotlightd chewing up CPU resources.
Going by what was listed in these posts — My M4 Mac mini overheating and freezing a… - Apple Community
and Entire System Freezes; Mac OS 26.2, M4 Ma… - Apple Community — I had to empty the contents of every folder in ~/Library/Metadata/Corespotlight, then restart my machine, and let Spotlight re-index my machine.
That seems to have solved the problem.
But I will only know for sure, when I next start recording.
(So @Gandolf243 knows, I’m using an M4 series Mac mini, running the recently released macOS 26.2 Tahoe, and the fans — I don’t know that there any any in this model — didn’t kick in.)

I’ve got a YouTube channel, where I do a daily brain teaser quiz.
The ‘scripts’ are each day’s questions for the next month: the Quicktime movies are me, reading out the questions.
The 18gb Time Machine drive is used to back both the main hard drive, and the 12gb drive: used for my Music library, and my movie file: some four terabytes all told.
The stuff on the external drive adds up to some 6.7 terabytes of material, including the media files.
(Yeah, they’re HDDs, rather than SSDs. External SSDs would be a *little* expensive …)
