I am setting up a family group with my kids and wife. I do not want to share my Apple TV subscription with my kids but do want to share it with my wife. Is there a way I can select who I share my Apple TV subscription with?

Subscription sharing is all or none without the ability to choose who you want to share a subscription with. You can send Feedback to Apple. The other option is to change the Screen Time settings of the kids so the age rating of content they can watch for TV/Movies is the lowest rating, which basically restricts it to only cartoons or set an App Limit in Screen Time to only allow 1 minute of Apple TV use (Apple TV is under the Entertainment section of App Limits).

Are you able to go to Settings > Family > Subscriptions, then turn on/off sharing for each individual subscription?

I tried that and wasn't able to turn any of the shared apps off. There are two apps showing as shared, one of which is Apple TV. When I tap on it nothing comes up to give me the option of turning the family share off.
