This multi-function printer lacks AirPrint, which means it is dependent on vendor drivers or vendor apps for printing and scanning from Apple iPhone, iPad, and Macs.
A computer can probably scan from this printer using TWAIN. An iPhone or iPad, not so much.
This printer appears to support web access, or at least web configuration. See if you can access it and check for updated firmware there. The control panel on this printer is very limited, so apparently no firmware checks possible that way.
A crashing app is an app issue, and is only really addressable by the app vendor. This unless the app vendor can isolate and provide feedback to Apple and get some underlying Apple bug fixed, or get some conflicting app removed.
Leave some feedback in the app store page for this app, too.
Brother is the local preference, if you do decide to replace. But whatever you pick, you absolutely want AirPrint support. Maybe also IPP/IPPS and TWAIN support, if currently or eventually using different not-device computer systems.
Delete the app, restart the iPad Pro, re-download the app, and try again.
If that fails, contact Epson support.
if it was me then I would check their site if they have new firmware (embedded software not the same as an app or drivers) for that model, if they do then you will likely need to connect it to a computer by usb to update it.

AirPrint includes scanning.

Looks like AirPrint scanning / AirScan might not be available from devices though, so my bad there.
This all is headed for Epson Support or for device replacement though, as it’s the Epson app that is falling over.
I have a different Epson printer (WF-4820), but I scanned photos last night using Epson Smart Panel with no issue (iOS 26.2).
Are you using the current app version?
MrHoffman discovered something that never occurred to me - your Epson printer is not AirPrint compatible!
My Epson is AirPrint compatible, and works just fine. I incorrectly assumed all ET models, being quite recent, would be AirPrint compatible. That lack of AirPrint is likely a huge obstacle for you.
