We are all Apple users like yourself in this community, so we have no way of checking what Apple is going to do, or not going to do in the future. Apple may make an official newsroom announcement for some things, yet we most often only see info.new features, bug-fixes, or other updates when they are released.
Seems many people are using CarPlay with their cars ok. Yet a few others do have a variety of issues that the community may or may not be able to help troubleshoot and / or help solve..

Jeep's 2018 - 2023 Renegade is listed OK
although for your daughter: Subaru's 2025 Outback is not listed ... does she use an app that needs update
(You may want to ask Subaru whether or not they provide a way to use CarPlay,.
or perhaps they need to ask Apple to add "Outback" to Apple's CarPlay list. ).

Is it Jeep's infotainment system which delivers the message that your iPhone is not supported ?
Seems there is not a lot Apple could do, if so.
How long since you last updated the Jeep software to keep pace with recent iOS versions?
Have you tried connecting by cable if wireless connection for iPhone isn't being accepted?
Perhaps compatibility of iPhone software and Jeep software needs to be addressed in order to use CarPlay.
I went to Jeep's website: https://www.jeep.com/ to check what software support they do provide. However, they require a user's zip code in order to access the site ... since I live in Australia any info I could access from the support / help team about updating the infotainment system may not be relevant where you live.
From a quick search online:
Jeep owners seem to say it is important to keep the software up-to-date, and some share their methods.
Didn't see anything for your paricular model and year. Try checking the car's manual for Jeep's info.
Seems cost is up to you. You may prefer to pay for a technician's valuable time to update the system.
Yet seems many Jeep infotainment system updates are simply downloaded over wi-fi by the car's owner.
One YouTube video I watched (newer, different Jeep model and year to yours) showed the owner simply clicked a few buttons (Apps > System > Software Updates) to access software updates, before demonstrating how to download using wi-fi supplied from phone. Maybe that's only on the newest Jeep models ? or not ?
