stop Apple AI from making things more complicated

how do I turn off genmoji?

and generally, stop Apple AI from trying to be so clever all the time?

I want to keep things simple and familiar

iPhone 16, iOS 26

Found switch under Settings - Apple Intelligence & Siri.

I'm sure some users enjoy exploring all the ways they can personalize their phone. I just want my phone to work in familiar, predictable ways. Not sure how this feature (noted as beta) got turned on, but it was simple enough to turn off once found.

Go to Settings > Apple Intelligence & Siri, and turn it off.

For Genmoji specifically while using Apple Intelligence, you simply don't select the option on the keyboard to create one. No different than the standard Emojis where you simply don't use them and there is no option to delete any of the emojis on your keyboard.
