Unfortunately, you're stuck in a catch 22. You can't turn off the passcode unless you turn off wrist detection, which will disable a lot of the features.

Unfortunately, if your tattoos interfere with wrist detection, the Apple Watch may not be the right tool for you.

Any restrictions enabled in Screen time, for example?

Did you try to turn on Wirst Detection and then turn the Passcode off after that?
