It doesn't have to be an Apple keyboard and mouse.
Most any USB Generic, Logitech or PC keyboard and mouse will work.
Which exact model Mac? Since you are recycling it you do not have to get it into re-selling condition. The only concern might be data on the drive. With some older Macs a drive wasn't all that hard to remove and you could remove it and deal with it separately.
