How do i get the activation lock of an iPhone 8 i got from my grandparents house and it was linked to some random account so i iTunes restored it and there was a lock on it. then i found out that the phone was linked to the account of somebody that passed away and was borrowing it from my grandpa. how do get it off??

Only path is with the credentials for the Apple Account holding the Activation Lock which will involve legal paperwork and accessing the Apple Account of the decedent, or will involve an original proof of purchase for the iPhone 8 from Apple or an Apple reseller.
Which for folks not fond of filing paperwork means that iPhone is going to be approximately impossible to access.
iPhone 8 tops out at iOS 16, which is starting to drop off of app support.
Alternatively, recycle it.
