You’ve probably downloaded maps of specific regions for use offline. When your iPhone loses internet connection, the Maps app will not be able to update your location and detour position on a map. The solution is to download maps to use when you’re on.
You can delete the download maps by following this path,
iPhone > tap Maps app > tap your user icon or initials in upper right corner > tap offline maps > delete or swipe to delete

The simplest thing you can do if you don't need the map data stored in the Maps App, is to hard press on it, and then you'll see options. Tap Remove, then tap Delete. You'll be told your data will not be saved. Then you can go to the App Store and redownload the app, which will show a Cloud icon next to it.
