There used to be a workaround in System Preferences [1]. It no longer works for me on Tahoe 26.2 in Pages 15.1 on my M4 Mac mini. However, Keyboard Maestro [2] fixed it for me.

The System Preferences -> Keyboard -> Keyboard Shortcuts solution still works for me in Tahoe/Pages 15.1
You may need to recreate the shortcut, since the OS sees 'Pages' (14.x) and 'Pages' (15.1, part of Creator Studio) as being two separate apps, so keyboard shortcuts applied to Pages (14.x) won't automatically apply to Pages Creator Studio.
