Note that you cannot delete most bundled apps. They live on a "signed sealed volume" together with other parts of macOS that don't need to be modified, except during macOS updates. The purpose of the "signed sealed volume" is to harden macOS against malware attack.
A few apps live outside the "signed sealed volume" and can be downloaded separately from the App Store. These include Pages, Numbers, Keynote, iMovie, and GarageBand. Those presumably could be deleted if you were really hard up for space.
