Other family members can only see things you have deliberately shared with them. The exceptions are shareable purchases, unless you hide them.

Depending upon who is the Organizer, the Organizer will see a receipt for any purchase a Family Sharing member makes if they do not have sufficient personal account balance to pay for the item or it is an item which cannot be purchased with account balance.
