I purchased an iPhone SE from a neighbor for my son .
I was trying to set it up but it took all of my information from my iPhone 8 and put it on the iPhone SE I do not want the information on the SE if I do a factory reset on the SE does it affect my iPhone 8 that I am using if I do not want the information on the iPhone SE?

No, a Factory Reset on the iPhone SE will not affect your iPhone 8 at all. Also the iPhone SE will want to be set up with a different Apple Account then the one you use on your iPhone 8.
