Parental controls are blocking me, the parent, from apps/sites
Set up age restrictions through family parental controls, and now it’s blocking me from the apps and sites I’ve restricted my children from.

Sounds like you restricted yourself rather than your children.
Go to Settings ➜ Screen Time and modify thme as you need for yourself.
Your kid's settings are all separate to those on your own device.
