Is there an interval timer in Apple Fitness or Apple One Subscription?
How come Apple Fitness or Apple One Subscription doesn’t come with an interval timer

Unknown. Apple does not discuss their reasonings behind certain decisions in these forums.
There are a number of free Interval timer apps in the App Store.
Not sure why such an app would need to be included in Apple One. For the Fitness app, any workouts in there should have their own timers on screen.
