Information provided in a previous post may be dated (plus you do not have to contact Apple to change age on adult accounts) since Apple no longer mentions that in the support article. Apple used to mention specific requirements for changing the age on a child account but they no longer mention any in their support article about changing ages. Your date of birth is expected to be unchanging.
If a mistake was made at account creation moment, then you’ll need to contact Apple Support. They may ask for proof, especially in case of child accounts, as Apple is legally required to shield those from more mature apps and content.

If your account is accidentally converted to a child account
If your Apple Account is accidentally converted to a child account, you can undo the change. If you’re part of a Family Sharing group, you might need the family organizer to help if it’s been longer than 15 days since the change was made.
1) Sign in to account.apple.com.
2) Select Personal Information, then choose Birthday.
3) Update your birthday and then click Save.
4) On the message that appears, look for an option to Revert Account.

5) If you don’t see an option to Revert Account, click Request Update.
6) The Family Sharing organizer receives an email notification. If it’s been more than 15 days, the family organizer must review your request using the link in the email, then follow the onscreen steps.
