Seems you are inconvenienced by the way 'Voice to text' gets some things wrong, and this "extra letters" issue in particular.

Sorry no-one, as yet, has answered whether or not they encounter the same issue. We are all Apple users, like yourself in the community so we do not see any of the feedback sent to Apple ... there's no way we can check, or say for certain.

Am no expert in this area, yet your post to the community certainly deserves some response ... below are a few suggestions ...
(1) It seems correcting this mis-spelling when it occurs could eventually set things straight. Siri generally learns from what you do.
Commands for dictating text on iPad - Apple Support
Eg: says:
Command "Change BlBlue to Blue: (Replace existing text with new text)
(2) You can set up auto-corrections.
Eg: You can set-up auto-correct word by word if it is only the occasional word. Maybe some particular words always appear incorrectly. How to use Auto-Correction and predictive text on your iPhone, iPad, or ... eg: says:
To manage your text replacements,
tap Settings > General > Keyboard > Text Replacement.
Eg: Replace BlBlue with Blue (to have it appear correctly whenever used.)
(3) Apple support's article: Dictate text on iPad
Eg: says you can use: "Spell a word":
Say something like “Let’s invite Steven S-T-E-P-H-E-N,”
or “Change tea to T-E-E.”
(ie: Change BlBlue to B-L-U-E)
(4) Changing to Voice Control for text-dictation may be an option.
Although it may take time to learn, Voice Control does offer more control. There are more ways to correct errors, too.
