Unless there is something special about the version of macOS running on the MBN, I imagine it's the same as on any other Mac running Tahoe.

Open System Settings, go to Apple Intelligence & Siri, and turn off the toggle for Apple Intelligence.

From my experience using Apple Intelligence on my MacBook Air many of the features are extremely useful, especially the writing tools which are throughout anywhere that you write particularly mail & messages. Image playground has been great fun making little icons and things and pop portraits of friends. Up to you mate but unless you are desperate for that 5 Gb keep it learn to use it. And of course it’s also slated for major improvements over the next year.
