People keep suggesting that turning off Siri fixes the problem but for many people this isn't working. I turned off Siri a month ago and now I have the exact same problem with voice control
Activating randomly... like whenever I move my phone with headphones in. My podcasts also speed up and slow down or stop playing randomly.... this only happens when I listen to podcasts which ***** because I listen to them every day on my walks.... I've tried 3 different pairs of headphones so the only thing I can think of now is maybe the wires are loose in all 3? This is getting ridiculous... i also can't believe that someone from Apple hasn't chimed in yet with a solution as I believe this thread started in 2013.
I was having this problem with my iPhone 5 when using the headphones that came with it. I swapped headphones for an old pair I had from my iPhone 4 and it was all fine for a week, however it then started happening again. I tried cleaning the headphone socket by blowing air into it and cleaning it with some lighter fluid on a piece of cloth, but no improvement.
However when I tried a pair of unused iPhone 3GS headphones it all worked perfectly again. When I tried my old iPhone 4 headphones again I discovered I could make it happen by wiggling the wire near the jackplug, so clearly there's a short circuit in the cable. Probably a similar thing with my iPhone 5 headphones.
My conclusion - in my case it was definitely a headphone issue, not an iPhone hardware/OS issue. YMMV.

Same issue : plugin headphone and voice control pops up.
My voice control would come on (Iphone 5) by itself when I used my headphones, while working out. I know I never touched the home button. For my issue, I agree with Tim's Pentreath's assessment. This seems like a disconnection in the headphones that I used that triggered the voice control as the wire moved. In my case, I had to replace my $150 Power Beats headphones....ughhh!
Just an update to my prior post, I cleaned the charging slot on my iPhone 5, I thought this corrected the problem, but after 2 days the problem returned. This is a break down of my situation:
- at any given time, the phone will attempt to call or facetime someone (I did disable voice calling eventually) but this would happen an the middle of the night while I was sleeping, in pure silence, it would still pick a name and call or attempt to face time
- At any given time the phone will just select music and begin to play it
- apps will open and close all the time as if i am pressing the Home Button, but when the Voice Control opens, the home button will not close Voice Control out
- this will happen when using head phones and when not using head phones, when the phone is plugged in, and when the phone is not plugged in, there is no pattern to when it happens
- the phone is completely up to date the home button was replaced at the apple store because of this issue, I tried to tell them it was not hardware, some times the phone will go three or four days like nothing is wrong, then i will spend about a day where the phone is basically unusable
This is literally driving me insane. I can't listen to music at all without it interrupting it every 3 seconds. Why haven't apple fixed this yet?
Take your phone to an apple store to fix it . T is a HW problem . This will fix it
this is exactlywhats happening to me, and its driving me crazy. Im about to throw my phone across the room. my home button isn't working either,and my phone often refuses to charge.
Its definitely not a hardware problem for me. I have had my home button replaced twice now and it has only exacerbated the issue. It's constantly activating voice control or closing apps and returning to the home page. It kills my battery in 1-2hrs as well. My phone is essentially unusable since I keep it in airplane mode to avoid placing calls randomly and have difficulty sending messages with it closing apps incessantly.
How on earth is it possible this problem still exists????? I'm having the same problem as anyone, and no, I'm not gonna repeat it. Why can't you just deactivate (music) voice control??? I don't want that ****, I don't use it!
I posted about this problem last November. It was really driving me nuts. Seeing your post made me realize this has not happened to me in months. I'm not sure why. Have you tried different headphones? my problem was triggered by headphone use. I've also updated my phone a few times, so maybe that helped.
Yeah, this problem is total BS. Apple: get off your pretentious, control-freak behinds and give me the option to turn this crap feature off, or I will go to Android, plain and simple. As soon as I upgraded to a 5s and 7.x iOS this has been RAMPANTLY ANNOYING. Please do the needful and fix this TERRIBLE BUG, it is ruining my iOS experience and has drastically downgraded my opinion of Apple hardware. BTW--I am in charge of provisioning 100's of corporate phones...I can decide between Apple or Android.

I have fixed this problem by giving my iphone 5 to Apple to fix a HW problem . I think it was related to a sensor of th the home button
WORKAROUND FIX
1. Go to Settings, then General.
2. Turn on Siri. This will turn off voice control.
3. Go to Passcode access (still under general). Set a password, if you haven't already.
4. Still under passcode settings, see "Allow access when locked." Set Siri to "Off."
After lots of googling I discover the solution above will work for those have the siri or voice control "magic" activating but not for music controls which are more rare to happen. Many people suggest that cleaning the iphone headphone jacked with a piece of paper (non conductive material) fix or minimizes it from recurring.
I have an iPhone 3. When I use headphones, music will randomly play or skip, and voice control will turn on. I did get new headphones, but I will have to switch to another pair of headphones to see if its just this particular set. Movement of the wire does seem to have an effect; I can't play on the move anymore it seems; only when I'm stationary.
