Reverse black background/white text in a Pages document
how do I reverse a blackbackground/white text on a pages document?

Pages was not designed to provide an appearance mode black background with white text. Although this is a feature of the current MS Word 16.107, and has been for quite some time, Pages is not a Word clone and Apple has not seen fit to make this appearance change.
You cannot game Pages by choosing a black template and switching the text color, as that does not export well to PDF or Word documents.
