Re: IOS Update 26.4 accessibility: " ... my air mouse and ring remote functionality doesn’t work the way it used to".
Am no expert in this area, (the experts are often people like yourself, who make use of this technology regularly), yet your question deserves some response.

Re: "... the devices choose to click instead of scroll and various other things like that".
Wondering whether or not your air mouse accessory may have firmware (or app ?) updates available, so it remains compatible with your iOS version. If you have a manual, you might want to check in that, or check with the manufacturer's support / help website ... or to contact them.
Another possibility is that Apple may have improved something, or introduced a new feature, into the apps / software you use.
ie: Sometimes app settings need to be reset if the default settings are not as you prefer. If new Apple software features or improvements need to be incorporated, you may be able to check all is set-up correctly in Settings, just as you want.

Re: "The devices were working the day prior to the update but after they don’t work the same"
Technology is always changing, so sometimes old ways of working have to be adjusted ... or settings updated ... or other apps used instead, etc.
