Hello 👋

You cannot downgrade to iOS 18 because it's not signed anymore but you can downgrade to iOS 26 if you want by following the steps in this article : How to uninstall iOS or iPadOS beta software - Apple Support (CA)

After you restart your iPhone, if you used iCloud backups, make sure to setup your iPhone without using Quick Start (otherwise your backups from iOS 26 might not appear)

I hope this helps, that said, have a nice day 

Can you not downgrade at all or do you only have the option to downgrade to iOS 26?

If the first option, it's likely that you created a backup on iOS 27 that over-rid your previous backup, and beta backups cannot be restored on previous public software.

If the second option, then you'll only be able to downgrade to iOS 26, not 18. The only devices that can downgrade to iOS 18 are the iPhone XR, XS, or XS Max, since they only support iOS 18 as their furthest iOS and don't support 26.

What baclups? Unless they had the good sense to turn off icloud backups it will be ios27 and useless.

As I say Apple offer zero support and don't tell beta testers that only an archived ios26 backup on a Mac is of any use. Your link is likely to lose the reader all their data without that caveat.
