My number is used as two step authentication for different apple ids. So I want to create apple id for my own but it is impossible because too many devices are using my number and I don’t have any access to them or their phone to delete my number from their accounts. Please help me what should I do or how can I remove my number from their apple ids?
Is simply getting yourself a new phone number a possibly viable solution in your specific circumstances.
It understandable that you prefer to keep your current phone number.
Can you not then obtain an additional phone number ?
All iPhones produced for nearly 8x years have been dual-SIM capable.

And by the way you never said you do not have access to the Apple Account owners. You said you don’t have access to the devices.

You should be sensitive to the increased “compromisability” of your account and limit the sensitive info placed on your devices accordingly.
Ensure that your Account Password is complex, long, and known ONLY to you.
Ditto for your device’s Passcode.
Ensure that ALL “unauthorized” devices are “disconnected” when you change your account password.
Ask the Apple Account (formerly called Apple ID) owners to update their credentials.
