Touch ID no longer an option on my device

Make sure you don't have Screen Time settings that prevent locking apps such as Restricting Passcode Changes in Settings ➜ Screen Time ➜ Content & Privacy Restrictions ➜ Allow Changes to ➜ Passcode & Touch ID.

Also, make sure you don't have any school or corporate profile installed or Exchange email set up that may be limiting this option.
