Today I updated to Safari 27.0, and now YouTube won't work. The page loads, but when I click on a video either nothing happens, or it tries to play the video but never does. I've restarted and cleared cache, but still no luck. I'm using MacOS 15.8 on MacBook Air 2020 (Intel).
Any tips on how to fix this?

Try reloading the page with privacy restrictions reduced. Press and hold the refresh arrow at the end of the address bar to select the option.
So i found the problem in my case. With Gemini and the Terminal i found out that the youtube websites were blocked from old software i had installed like surfshark VPN, Foqos App. Something must have happend when uninstalling. So i installed them again and uninstalled immediately afterwards.

Have you tried creating a new user account and seeing if it works there? I have no issues with YouTube in Safari in macOS 27. That would cause me to consider that it's not a systemic bug but rather some issue caused by your configuration.
Do you use VPN by any chance?
If you do delete the VPN app and reboot.
As said YouTube is working fine with Sequoia 15.8 and Safari 27.
I contacted Netflix live chat as the problem occurs on Netflix and Youtube only. (I have no problem on Prime)
They say this issue is related to Apple and that Apple needs to develop a new update to fix the problem. (Apparently, Safari 27 or Sequoia 15.7–15.8.2 didn’t work well on the 2020 MacBook.) I don’t know if this helps… (No, not really, because there’s nothing I can do but wait—I’m not even sure if Apple is aware of the issue.😮💨)
And I agree this is NOT professional.
Use a different browser - anything but Chrome. I'm still on Sequoia but my list of sites which don't work properly with Safari but work OK on Firefox is growing every week.
Identical problem as me Sergio! I’m using Air 2020 i3 too.
I’ve found using the DuckDuckGo browser will play, so perhaps try that.
I find YouTube OFTEN opens with an Ad, rather than the selected content I expected.
if you have Ad Blockers active, you will likely see exactly nothing until the Ad finishes.
I am also running Sequoia 15.8 and YouTube works fine and it has nothing
to do with the latest Safari 27 version.

I’ll erase all settings iCloud etc, reinstall macOS again, system back to previous safari from 27 to 15.8 or something, after that, YouTube back to life, I tried updating Safari again to 27 and the problem returned! So issues with safari 27💁 at MacBook Air 2020😉
After updating to MacOS 27, my Mac Mini M2 won't play YouTube or even Netflix properly. I am using 2 displays and the problem occurs to me when the main display is selected as my main audio output. However, when I choose the secondary display as my audio output, refresh the website, then it'll work properly. The reason why this won't work for me is because my secondary display is a tiny 7" monitor that I specifically use to keep my work chat open all the time. So you can just imagine the low audio quality.
And after researching, it looks like this issue has been reported even before the official global release of MacOS 27 so it's surprising to see that Apple ignored the bug reported and allowed the roll out.
Funny how we have to come up with workarounds instead of Apple "engineers" just doing their jobs properly and fix the simple bugs before the official roll out of what they proudly present as their best ever yet OS.
Try to use the internal speaker.
Do not output the sound via the HDMI/thunderbolt
Apple will probably send out a patch sooner or later. Till then we'll just have to use Youtube on another browser.
