I have an iPhone with two cellular smartwatches connected to it - one is setup in Companion Mode and the other is setup in Family Mode.
I need to change the phone number of my iPhone. Will both watches continue to work? Or will I need to do something in the Watch app as well?

The Family Setup watch should not have any problem, as its not actually direclty linked to your phone number.
The "companion" as you call it should also continue work if its a GPS only model. If its a cellular model, you may need to contact your carrier to make sure it remains tied to your iPhone's service.
If you are changing carriers a long with the number and the watch is a celullar model you will need ot have your enw carrier add it to the iPhone's plan.

I don't know what "Companion mode" is. The only references I can find to it seem to use it synonymously with Family Setup. Regardless, I don't think changing the number should necessitate you doing anything. The watches are connected to the eSIM. When you change the number, I believe it should all update automatically. However, you might want to double check with your carrier when you get the number changed.
