When you placed the order, what is the date range Apple promised on the confirmation you should have received? As for Order statuses, an order will remain in Processing until the very moment it is preparing to ship. Once it moves into that it usually moves to Shipped fairly quickly at which point, Apple will send you an email with tracking details. And your payment method won't be charged until the phone ships. Apple wants your money as much, if not more than you want the phone!
Your phone is not delayed if you are still within the date range promised. The fact an order remains in Processing does not mean the phone is delayed or that the delivery window will be missed. It's just a long time in the Processing stage.
