Delete the account on the iPad, remove all mails on the resp. mail server from the inbox or delete them, renew the account on your ipad and wait till the next crash...
Just open Settings app and go to Mail, Contacts, Calendars and turn off 'Load Remote Images'
Go back to mail app and everything should be good to go. NOTE: When I discovered this solution it deleted all mail in my mail app. I would suggest to SSH and save the mail you want to keep. This is a very simple solution to a very big problem. Hope this post was help...PEACE

I am running into the exact same problem. I understand the "5 or less" workaround... But that's un acceptable. I am absolutely shocked that Apple hasn't adressed this problem in one of the fundamental base applications! Mail is just about un-useable on my iPad2. Yet it works perfectly on my iPhone 4. I just don't get it.
I'm having the same issue and think that "5 or less" is a poor workaround. If there is a mass delete option, it should work regardless of the number of emails selected.
I found a "work around" that is not the "5 or less". After many many tries at this, with the email crashing each time, I learned that it will crash only if you are deleting messages while in the "All messages inbox", and you have more than one email address.
Instead - if you go to each mailbox individually, you can then select multiple messages *within that inbox*, and delete them without the program crashing.
This worked for me every time.
No one has mentioned it here but this also happens on my iPhone 4. The 'All Inboxes' thing seems to be the problem across platforms.... go to individual mailboxes and delete and it works fine.
Mail has crashed leaving a white screen... Any help for this...??? When I go to settings the mail settings won't open...
