How to show Greek and Hebrew fonts when exporting an ePub?

I've got some documents that are mostly in English, but have a handful of Greek and Hebrew words. Is there a way to have these show up in the ePub export? I'm viewing them in iBooks on my iPad, and I need to be able to readjust the font size.

I didn't notice an option for embedding fonts, are there standard fonts that can be used for Greek and Hebrew words that I should be using?

2010 13" MBP, Mac OS X (10.6.6)

This should be not problem if you are using Unicode Greek and Hebrew. Are you sure that you are not using some the non-standard Bible study fonts that map these scripts to Latin? Normally if you are creating proper Greek and Hebrew in Pages you must go to system prefs/languge & text/input sources to activate and use the Greek and Hebrew keyboard layouts. Is that what you are doing? After that the font is pretty irrelevant.

The iBookstore claims to not support Hebrew, but I think that may be for text entire in that script:

As I'm curious, I build a sample file in Pages using different fonts and exported it as epub.

I would be interested to learn how it is rendered on an iPad.

This is great! Although I'm still confused at how to get the Greek and Hebrew within my Pages document formatted correctly. I have been using specific Greek and Hebrew fonts, but when looking at your included Pages document, the text in Greek is still a "normal" font. What did you do to get the text to display in Greek with the Arial font?

I grabbed the characters from the Character Palette.

But Tom Gewecke described the logical scheme : activate the Greek keyboard.

We are no longer in the so called "extended ASCII" era.
We are in the Unicode one.

In every Unicode fonts, Greek characters are supposed to be available as characters $0380…
