If you want a really cheap way to do it;
Use a headphone splitter and a Guitar Jack to Headphone Jack converter. I do. It's easy and cheap. I know some people worry more about the complete quality of recording but I used to use the Guitar Jack to Headphone Jack converter on my Dads Mac before I got my iPad and I thought the quality was really good.
I have 2 ways of setting mine up:
Guitar Jack -> Converter -> Headphone Splitter -> iPad and then my headphones into the other headphone splitter port.
or
Guitar -> Digitech P90 FX Box ->
Output 1: Amp
Output 2: Headphone Splitter
-> iPad
For those in the UK Asda do a £4 box full of all the converters you'll need. In the US, I'm not sure where but I don't see why you wouldn't be able to find something for it.

Plain cables really give mixed results, and I don't recommend this method. Part of the problem is that there's a mismatch in impedance between the iDevice and the guitar. There is a better solution though.
Using a specialized iPhone Guitar Adapter is the best in my opinion. I don't recommend the plain wire approach unless you're on a budget, it won't give you the best most even results.
There are quite a few adaptors made just for iDevices. I currently use the iRig but there are better one's too. You can see a full comparison and recommendation on the Guitar Fresh site (click below).

The best value for money solution I have found is the Tiger guitar to ipad interface. http://guitartoipad.co.uk/
I got mine from here http://www.djmmusic.com/Itemdesc.asp?ic=ICO2-WH. the interface allows you to connect your guitar to your iphone/ipad etc and it instantly allowed me to record a tune, experiment with some different sounds and tune my guitar!
