If all you're after is 24 frames per second, you can use File>Share>QuickTime>Expert Settings to do that.

You should also use a codec (for example DVCPRO50 - NTSC) that allows for progressive rather than interlaced scanning. This helps give more of the flicker of film.

My best advice is get in there and play around until you find the results you want.

It's never safe to assume anything!

But I guessed that David was after something a bit subtler and not as aged looking.

Of course, I could be wrong and it wouldn't be the first time! It never hurts to point our all the options.
