How to change fill color in extreme newsletter in pages

In the extreme newsletter template, the "cover" page has a red outline/partial background behind the word "Extreme". When I click on the red background I see the "fill" button in the top left of Pages have the same red color. But when I click on it, nothing happens. On many other templates, including other pages from this template, it allows me to change the fill of many other selections. How do I get this red box changed to a different color?
