When you actually create a document, type English text where the placeholder is. As the existing text is just a placeholder, its language doesn't matter and can't be changed.

No, none of the original templates are in Spanish. They are in Latin. You are supposed to change the text to something you yourself want to write.
After a little more exploring, I found the answer... The templates are intentionally created this way.
