I have successfully used 'connect to server' to do just that, connect to a server. When I entered the user name and password I checked the 'remember' box, now when I connect the user name and password dialog box doesn't even appear.
How can I change the user name and password for connecting to a server? I want to be able to connect to a server from one remote computer, using multiple users.

I have done both; deleted the history and deleted the keychain entry. Still no user/password dialog box??!!
I found the answer, you have to make sure you delete the correct record from the keychain. There were two records one for the IP address and one with the server name. To be sure delete both.
Have you tried clicking on the button with the clock face in the top right corner of the "Connect to Server" dialog and using "Clear Recent Servers..."?
If that doesn't help open "Keychain Access" and use the search field to find and delete the entry for the server/user name combination.
