I installed a beta version on my iPad 2 prior registering and prior taking note of my UDID. Now I can't find my UDID, so I can't register and I can't install a lower iOS. Any idea how I could handle it?

I would go to the Developer's Forum and ask for help there.
I did the exact same thing. Looking for answers as well. I'll post if I can figure it out.
I managed to handle it using Xcode.
With Xcode you can restore with iOS 4.3.3
You can also open System Profiler and find your device under "USB". It will show you the device's UDID. You do not have to install Xcode for this to work.
place into recovery mode them attempt to restore should restore back to 4.3.3.
