I entered a test address when setting up iCloud, but now cannot find out how to change this to the email I would like with the @me.com ending. Any ideas?

It is not possible to change your primary iCloud email without starting over. You would have to delete your entire Apple account and make a new one. Then you could set up a new iCloud email.
