I am getting a message "can't open because PowerPC applications are no longer supported" What do I do about these programs?

It's not as simple as that. I have Parallels and it doesn't give you the choice of installing OS X as a guest. You have to employ the process mentioned in one of the links above.
Mmm, no. I just installed the demo of Parallels 7 in Lion and was able to choose my Snow Leopard disk and the Mac OS as a guest OS.
It is confusing because the initial interface to set up a new guest OS doesn't even mention OS X. But you just double click the icon of the DVD which says "Install Windows from DVD or image file" under it. Then it finally tells you, "Insert an installation disk for Windows or another operating system, or choose another source".
So from there I select the drive the SL disk is in and click Continue. The default name it gives the guest OS is "Mac OS X", with a choice to customize settings before starting the installation.
Bad news. It still won't let you use a client version of Snow Leopard. An error message states Leopard Server, or Snow Leopard Server only. I don't know if you'd get the same message if you were running Lion Server as the host OS.
Yep, I think it's for the reasons that I mentioned in the post above. Again, for these reasons, you have to use the process described in one of the links above to install SL client.
It can be done though.
...newer hardware requires software support that is not present in older systems.
Good to know. Thanks!
Has anyone recovered files that cannot be opened due to the upgrade? My problem is more desparate than Rosetta - I am locked out of 16 years of Quicken data.
Sounds like you'll have to upgrade your Quicken software. The latest version of Quicken was released not that long ago, and it had been several years since the last upgrade. The necessity of having to upgrade essential software once in awhile should not be a surprise to anyone.
Intuit released an Intel version of Quicken some time ago. Upgrade and import your data.
As I recall, Quicken stores the user's data files in the Quicken application folder, which is an incredibly bone-headed thing to do imho. Make sure that you save a copy of your data before you upgrade the Quicken app.

Can you be more specific? Which version of Quicken are you using? Quicken 4, Quicken 98, Quicken 2000?
What was your operating system before the upgrade? What hardware? Did you upgrade both hardware and OS?
NOTE: Quicken data is stored where ever you told it to be stored. Backup data is stored in the Quicken applications folder by default.
