As far as a GUI solution... I think you're stuck with this new feature. Currently, there is no way to disable multi-user screen sharing or remote management. There might be a plist hack, but I've not heard of it.
Yeah im hoping there is a plist mod that can be done, i just dont know how to go about finding it.

One thing that might help save time....
Connect to server >> vnc://username@192.168.0.2 and then save the password.
That link will work with only needing to click to connect to the current user or a virtual screen.

Maybe I'm not understanding what you're meaning... But ...
System Preferences, Sharing, Remote management.
Set the "Allow Access for" Only these users. Just set one user.
Click the options button. Select the features that you want.
This seems to be the same behaviour as in SLS to me.

In Snow Leaopard, Screen Sharing server would start the session after vnc authentication is complete. So the vnc client would attach to the actual display.
However in Lion the Screen Sharing Server requires a second authentication whereby the client must choose which account to use. So the vnc client is attached to a virtual display that presents the login screen before getting either the actual display (if you authenticate as a logged in user) or another virtual display if you choose a different user.
I want to be able to configure Screen Sharing server so I can choose between 10.6 and 10.7 behaviours.
Currently I need my vnc client to get the actual display after authentication.
