How do I change the DNS for iOS?

I am plagued by the Lion/iOS 4.3.5 WAN sluggishness.


Previously it mainly affected my Lion machines which I changed to an open DNS and that fixed them.


Today it affected my iPod Touch. Everything was up and working but the iPod stubbornly showed "domain name doesn't exist" messages.


Is there a way to change the DNS on a 4.3.5 iPod in the same way that I changed the DNS on the Mac network?


I don't understand IP entirely but presumably the iPod is still using the Apple DNS settings which seem to cause this problem.
